The Guarani pounded the toasted leaf into a powder and consecrated it in water. In the missions, this fine powder was the caá-miní, the most prized yerba mate of its time. Yerba Matcha brings the custom back with today's technique: leaf from mature branches, a sapeco (a quick pass over the flame) at just the right time, and a fine grind of the whole leaf, with the caffeine and polyphenols that an infusion leaves behind. Whisk it into water, milk or a plant-based drink. It goes into smoothies, cakes and ice cream. With Japanese matcha scarce and expensive, this is the green powder with flavor, history and origin.
